You're experiencing some issues with Skyrim SE. You've already made fixes on your own and received help from others. Now you're stuck with the Better Vampires mod 8.1, which seems to be working in-game but not showing up when opening the MCM mod menu. You need to adjust certain settings, but you're unsure how to proceed.

Certain modifications won’t appear because SkyUI is mostly built by hand from the original. You need to request changes for some plugins to adjust settings.

No problem. And no. Alot of mods don't incorporate MCM because skse and skyui were not made yet when the mod was released. So unless the mod specifically states it uses MCM there is nothing you can do right now. Sometimes it takes a little time for the MCM to find it, but should only be a minute or two
