An RTX 2070 remains a solid choice for quite some time. It's best to hold off on upgrading until newer CPU releases arrive. Are you running an SSD as your boot device or an HDD? If you haven't installed an SSD yet, adding one would greatly boost your system's speed.
Yeah, that's more than enough. You could always upgrade to an RTX 2080, but I personally don't think you need it.
You might notice improved read/write speed by adding another 120GB SSD in RAID 0, but only if you're using it just for the operating system and/or caching data. Avoid RAID 0 for storing important files or data. It's better to keep your hard drive for regular files and programs, and use two SSDs in RAID 0 for the OS and as a fast cache.
