Consider specs for a small server for two users. An i3 6100 might be too much, but an Intel NUC with a Celeron works. Dual-channel 4GB RAM should suffice. For Minecraft, single-core setups are fine; hyperthreading isn’t necessary and a 2c4t CPU could help. Running Minecraft on a laptop with a bad display is possible, but it may still lag if you're far apart. A simple configuration would be lightweight and efficient for smooth performance.

Yes, it’s feasible to connect both players using Ethernet cables. This setup would work well once you and your partner move in together. The laptop issue is manageable since you have a contact who fixes old devices, so you can get the display repaired if needed.

I’m not familiar with the Ethernet issue because I haven’t worked with a server before. If you don’t have a laptop in mind, a PC would likely be more reliable and easier to upgrade.
