I think true ray tracing is only available in the Windows edition of Minecraft. The Java version uses shaders that resemble engine-based ray tracing effects, but don’t actually perform real-time ray tracing. Based on what I found online, I also realize I haven’t played Minecraft recently and don’t have a GPU with ray tracing support.

Verify if your frame rate isn't capped at 60 FPS in video options or if your VSync remains active during gameplay.
