I wouldn't think about setting up Arch Linux; it's a solid Linux foundation but not the easiest to get started with.

FreeNAS needs 8GB of RAM, but this machine uses DDR1 memory, which is tough to locate. I’m searching for four DDR1 ECC 184 modules. This also explains why I’m sticking with older operating systems.

This might spark some debate. Selling your gear on eBay and swapping it for an affordable Haswell dual-core processor could save you a lot of energy and improve performance with newer operating systems and drives. The two Xeons typically draw around 220W TDP, much higher than the 35W from a budget dual-core model.

Reasonable. Earlier adjustments kept the system running with 32-bit support and 4GB memory.

many guides exist for setup, but the real challenge lies in applying it later

Even with guides, it wouldn't be that simple. You still have to understand what you're doing to get it right.

I succeeded, but I’m not a Linux expert. It only requires some experimentation in a virtual environment to understand how it functions before applying it to a server.

That's the approach I took too, and based on what I've seen, it's actually quite manageable on the server side.
