Are you thinking about using FreeNAS for backup only? Windows Server 2003 runs on Windows XP… That’s quite old.

The server lacks sufficient power for FreeNAS. Minimum requirement is 8GB RAM.

The system is quite outdated, so I don’t want to strain the processors. It has two SATA 1 connections on the motherboard and also two IDE ports available.

If you're familiar with Linux fundamentals, Arch Linux is a great choice. For your setup, if your specs allow, go with XFCE.
