Are you required to watch the initial two matches before seeing the third? That question is important.
They've adjusted the rules so you can enter right away without needing to watch the previous two matches, but it feels similar to experiencing the final scene of a movie series without seeing the entire saga or what came before (though some details are hinted at, with a significant portion revealed later).
It's not necessary to engage with the other games, but understanding the story would be clearer if you reviewed or played the related books.
Watch a YouTube explanation video—it'll cut through the hours. The original Witcher has rough gameplay by today's standards, and it doesn't look great. Witcher 2 is a big improvement and worth playing for fun and decent graphics. It's not essential for the story.
If you're not playing, you're missing out on a lot. These two titles offer a wealth of content. Even if you don't feel the need to dive in, understanding the story and the experience is still valuable. The gameplay has evolved from W1 to W2, with certain decisions shaping events in later games—something similar to Mass Effect. The graphics in W2 marked a significant improvement (to my eyes) compared to W3. Additionally, you can save your progress and transfer it. I'm just beginning W3 now, even though I haven't reached chapter 1 yet!
