Are you receiving your FIOS connection through Ethernet or Coaxial cable? I’m curious since I understand they switch to Coax when streaming services are active. If it’s Ethernet, the Synology RT2600AC is what I own, and according to Smallnetbuilder.com it should handle Gigabit Internet. That’s the main point—just because a router has Gigabit ports doesn’t guarantee it can support those speeds.

Consider mesh only when necessary. Ideally, use several routers or access points connected by Ethernet cables to extend coverage where needed.
I've got a fiber connection going in from the outside, followed by Ethernet to the router. For the router, I suggest checking out this one.
The guidelines are not complete yet, meaning what’s available now will change significantly in about a year. WiFi 6e adds another frequency band, 6GHz, and possibly more tweaks. This applies mainly to the access point side! While WiFi 6 works on some client devices today, it isn’t widely supported overall.
