These are just file records. You can edit or remove them with the registry editor. Refer to the image below... navigate to Computer\HKEY_LOCAL_MACHINE\SOFTWARE\WOW6432Node\Microsoft\Windows\CurrentVersion\Uninstall. One of the subfolders will show DisplaName as "Grand Theft Auto V". The QuietUninstallString and UninstallString instructions tell Windows what to run for uninstallation. The InstallLocation field indicates where the software is installed. In the picture, if I change "Samsung Magician", you’ll see the corresponding folder {29AE3....} with DisplayName set to "Samsung Magician". Deleting that subfolder will remove the GTA entry from the list.

Consider checking the typical installation paths such as "C:\Program Files (x86)\Rockstar Games\Grand Theft Auto V" or "C:\Program Files\Rockstar Games\Grand Theft Auto V." Try removing it through the Rockstar Games Launcher first.
