I'm still exploring many titles, but Nier Automata offers engaging boss battles that aren't overly challenging unless you increase the setting. The DLC features bosses that are quite demanding.

It seems the game is being remastered for newer platforms, but you already own a PS2, so you're not restricted by that. You might want to check if it's available on PS4 as well.
