Reject these options. Either settle for a Xeon for core density or work with high-end CPUs that have 6 cores and 12 threads on mainstream systems.

I prefer an older platform because I’m looking for stability and familiarity. If possible, I’d opt for something more recent like RYEN or a 1151 chip.

Are we talking about LGA 2011 or LGA 2011-3? Here's for 2011: https://ark.intel.com/content/www/us/en/...orted=3586 And here's for 2011-3: https://ark.intel.com/content/www/us/en/...orted=3561 All Xeons are unlocked, but if the dual or quad socket motherboard that you are talking about is a server board, overclocking will be a no-go since those often don't have overclocking support as that's not something servers usually need to do.

One of those Xeons that fits is the AMD Ryzen 9 7950X, as it also allows overclocking and supports dual socket boards.
