I've noticed an issue with games that I downscale to lower resolutions. My monitor has a 1920x1080 display, but my GPU struggles so I often play at 1366x768. Recently, I downloaded The Witcher 3 and set it to 1366x768 while Discord runs in the background. When I tried to launch it, it kept minimizing even after opening. Any advice? This matters because my monitor is 60Hz and I disabled V-Sync plus set unlimited FPS.

Have you checked if the Discord game overlay is active? If yes, turn it off and see if it works again.

Discord is open but not always optimized for gaming sessions. It doesn’t adhere to standard Windows interface rules, which can lead to conflicts with other programs. For personal use, running it maximized caused problems. The better solution is using the other end of the support team and developers (DisplayFusion).
