I definitely do it this way—I run a NAS to host games directly and keep the drive always accessible. I have a 10Gb connection between the console and my computers, which works smoothly. The main problem you'll face is with game saves; Steam handles cloud saves well, but most preferences and save files move to your documents. Be careful that if you delete or move them, Steam might re-check their validity. When you copy or delete, it often asks Steam to verify the files again, and I’m not sure what the source is.
