After OCing my I5 2500k to 4.4ghz, I achieved a max of 71c on a core while testing with Primer 95 and didn't exceed 68c during GTA V playthroughs. Is this a safe approach for the long term? Using a Cryorig H7 cooler.

Even though I usually advise against auto overclocking, it's okay if your voltage stays below 1.336. The maximum voltage for your CPU is 1.52 volts.

You adjusted the motherboard's voltage to a specific manual setting.

My motherboard only lets me adjust the voltage and overclock using Turbo mode.
I adjusted the multiplier to 44, reduced Vcore by -0.100v, and increased Voltage for Turbo by +0.232v.
The settings appear stable so far.
On full load, I’m getting 1.336v according to CPUz.

Sure, just to clarify, I was wondering how long you typically run this overclock.

Have you been keeping your CPU overclocked for a while now?

That's a significant amount of original content, and I'm interested in understanding its longevity.

I have been adjusting stock configurations for the last five years. Recently, I upgraded my graphics card to a GTX 1070 and decided to overclock my P8Z77-V motherboard to eliminate the bottleneck.
