It's beneficial but ensure the board's power supply can handle the load. We've got a tier list for AM4 boards in the forum—verify it first. If it works, go for the 3900X. The additional cores are really helpful for your needs.

3800x won't help much at 3700x. Video editing needs cores, not single threads. Workload-wise it's fine at 3900x. 3950 is possible if you manage it. More cores work better. A 3700x will run okay. If you can't justify 3900x, don't expect a 3800x either. Choose the 3700x instead.
