The method to operate a Hackintosh using an iGPU requires an Intel processor equipped with an iGPU, which remains the current situation.

I considered upgrading to a Ryzen because it seemed about twice as fast as the i5. I think I discovered this by checking the benchmarks on Windows; on Mac it should work fine.

There simply isn't a feasible way to use a Ryzen APU with Hackintosh without significant effort. Running Intel is much simpler.

Earlier discussions highlighted issues with using a Ryzen APU. It's recommended to stick with Intel or use a dedicated GPU paired with a regular Ryzen processor.

I also considered purchasing an Intel NUC equipped with an i5 8259U and setting up a Mac on it.

It seems like you're expressing regret about something happening. It looks like you're reflecting on how things have shifted over time. That's understandable.

Didn't you test out the Ryzen? Before that, you'd probably run into some problems. AMD Hackintoshing brought a big change. I even managed to install macOS on my R7 2700 build—about an hour to set everything up and configure, then the installation was smooth.
