I'm starting my first PC build and originally thought about using a 3300X, but they're no longer in stock and I'm unsure when they'll be available again. My GPU is a 2060 Super, and I'm curious if switching to a 3100 would make a big difference. I'm open to any other CPU suggestions since I have an Asus Prime B450 Plus.

The difference between the prices is the additional cost of purchasing a 3600 instead of a 3300X.

Extra twenty dollars speeds things up, thirty more brings you the 3600 version—it’s a much better option overall. Looking ahead, 3600 seems far more promising than 3300x with 2C4T.

If funds permit, opt for the 3300x because it requires just one ccx and delivers better results than the 3100.

The variation is around €40 here. The gap between 3300X and 3100 is significant in certain games. Still, you likely retain strong performance from the 3100 unless you're eager to wait for the 3300X.
