Hypervisors are often unnecessary. Simply execute both operating systems concurrently. Jokes aside. If you need to run the hypervisor on a flash drive or SD card, EXSi is an option. For a dedicated storage setup, Proxmox works well.

ESXI might be simpler for more complex configurations (like VGPU), but I can't afford it, so I haven't experimented much with it. I prefer Proxmox because it's just Debian with QEMU and a web interface, both of which I'm comfortable with after using them before.

Yes, it allows using different GPUs for separate VMs. You can assign one GPU to multiple virtual machines.

It works with both options, though the VGPU configuration can be tricky and isn't free. I've stopped trying to set it up repeatedly; instead, I connect a graphics card directly into one virtual machine.

PCIe passthrough is generally compatible with all cards, though problems might arise. It’s likely better to use RAID with NVMe drives on the host and create virtual disks there instead. If you have the equipment, give it a shot!
