I have Windows 11 on one drive and Windows 10 on another. Upgrading Windows 10 to 11 might affect the other drive that already has Windows 11 installed?

Two possibilities exist: adding ten and eleven together or adding eleven and eleven.

Since I need and aim to retain as many Windows 10 programs as possible, as some can no longer be obtained.

When you remove the physical connection of the Win11 drive, the system will attempt to restart automatically.

I never attempted it, my boot sequence in BIOS is Windows 11 first, then Windows 10...I previously adjusted the order to Windows 10 first and then 11 and it worked.

Try it.
This is a critical step, to let us know how to proceed.

I'm not close to the PC, but I'll attempt it this evening when I return home.
Thanks

Windows 10 can start without the Windows 11 installation, and Windows 11 will launch without needing Windows 10.

It is completely feasible that these applications may not work seamlessly with Windows 11. Based on their functions, it is recommended to seek out options that are compatible with Windows 11.

Are you sure every one of these programs works with Windows 11?
