It should, though I don’t think there’s much need to upgrade. The performance boost isn’t substantial given the budget, and your existing setup plus PSU works adequately.

1060 works adequately. For quicker performance, try 1660. Both options offer minimal power.

I think a GPU boost seems excessive for the games you usually play (GTA V, Overwatch, Rainbow Six Siege, Rocket League, Assassin's Creed Odyssey) since they all run smoothly under 100fps.
