I don't see any problems with 2x32GB right now. A little too much, but using four memory sticks is challenging, and this removes the need for a large amount later on, and by then quad sets might be easier.
I haven't tried an MP44 yet, but I've mentioned it in some budget builds. I do have some Crucial drives without issues so far. The only failed SSD I've had was a Samsung 960 Evo, which still worked for five years. I also have several other Samsung drives that are still functioning. I currently have a Sabrent in my main gaming rig.
For video capture, the secondary drive can be almost anything—just treat it as if it could fail anytime. If you need to keep things safe, think about an external backup drive or NAS.
MP44L seems to offer great value. They aren't terrible at all. DRAMless is fine, though it doesn't matter much.
990 Pro is top-notch. The downside is the high price, but you can increase storage with more affordable drives. Just be cautious and choose reliable options, steering clear of extremely cheap ones.
For 64 Gb RAM, you're unlikely to reach 20Gb usage soon. Over the next few years, this number might approach 32Gb. At that stage, consider upgrading to a 64Gb kit instead of selling your current one.
Purchasing a 64Gb kit now means spending money without immediate use. In a few years, better DDR5 models will likely appear. The trade-off is the value of your existing 32Gb kit. You can decide based on your needs. I currently have 64 Gb and use 12 on tough days...

Also, the 14700K represents an upgrade over its 13th generation predecessor. But it's not worth paying a significantly higher price for it.

Typically you should choose the drive with your OS/Applications installed on it to be the quicker one. At the moment, the gap between a SATA SSD and a PCIe 5 NVMe is minimal in gaming. This situation will shift as more companies adopt direct storage, but PCIe 3 and PCIe 5 drives should remain nearly comparable for gaming performance for at least the next five years.
