Wouldn't removing both the System Partition and the Main Storage Partition cause data loss? I think deleting just the System Partition or overwriting it safely keeps your files and programs intact. Just confirm the drivers are compatible with Windows 7.

IIRC windows.old keeps a backup of c:\Windows, c:\Program Files, c:\ProgramData and the folders from before the upgrade. The files inside those directories probably look different after the change. A different windows.old folder wouldn’t contain your programs or documents, so you’re not in a better situation than before.
