In Minecraft you can adjust RAM settings using Java options in the launcher. For example, run "java -Xmx10g -Xms4g -jar minecraft_server.jar nogui" – this sets the server to start with 4GB and can expand up to 10GB as needed.

It doesn't seem to matter. I'm trying to believe my 16GB of RAM could be helpful, even if it rarely uses more than 4GB.

From my tests (ignoring memory leaks), even the strongest processors stop working around 3-4GB of RAM. If you're okay with your server slowing down a lot, you should be fine.
