For handling a 2TB project, the big RAM could help boost performance, though I’m not sure yet if it’ll really make a difference since I’m just starting to build PCs.

This amount of memory is typically found in servers and similar devices. A standard user with 32 to 64GB should be fine. I suggest starting with 32GB now, since DDR5 will arrive soon, and consider 64GB only if you really require it.
