I've been playing Dirt 3, but it's sadly no longer available in its new form. From what I've heard, Dirt 4 didn't meet expectations, though Dirt Rally 2.0 was excellent. I bought both titles this weekend, but haven't played them yet, so I can't share my personal thoughts at the moment. Grid 2 has also been quite enjoyable, though. It really depends on what kind of game you're interested in. Dirt games focus mainly on rally racing, but a Formula 1 title might suit you better? Or perhaps Forza?

Assetto Corsa is an excellent simulation. Which external device will you choose? KB+M? Gamepad? Steering wheel?

I've played a small number of games at a shop recently, and it was enjoyable, though it feels more realistic compared to the Dirt/Grid titles I talked about.
This isn't inherently positive or negative—it just varies based on your preferences.

It's going to be tough. I don't have much experience with sim games using KB+M, but I recall it wasn't great. A decent controller is essential for this kind of game. You might also want to look at Project Cars 2 and Grid Autosport, or the new Grid game.

It ran for just over 100 hours on my PC without any crashes during that period.
This was on an R7 1700+RX 580 system.
I only tested the benchmark on my current GPU (RTX 2070 Super) and it performed well, although I haven't played it as much.
I've seen the video you're referring to and (in the forum or YouTube comments) I mentioned what I said earlier (except for the new GPU part).
Dirt Rally is also a really enjoyable game.
I'm not sure how it will work with a keyboard.

Play the crew 2, it's quite good too, and the new need for speed game is worth checking out.

What about a car crash simulation similar to BeamNG Drive?
