I'm considering switching from the 5070 Ti to the 5080. The 5080 seems strong and handles overstocking well, though it's about a 12-15% upgrade over the 5070 Ti. Right now, 5070 Ti is around $800 while the 5080 is near $1400. The price gap looks significant compared to the performance gain. My current specs are 7800x3d, 64GB DDR5 6000, and a 1200ms PSU. I'm planning to move to 1440p and eventually 4K. I've heard DLSS is superior to FSR4 for AMD graphics. Any advice would be helpful.

Check these reviews carefully and then make your choice.
I’d likely choose the RX 9070 XT.
On the other hand, the RTX 3080 Ti is already quite capable.
The 5070 Ti offers only a 35% boost, while the 5080 provides a 50% increase.
You might be let down by such a modest gain.
A full improvement would be needed to reach the target range of 4090 and 5090.

I believe the extra expense isn't justified since both cards come with 16gb of RAM. The main concerns beyond price are the poor 12v Hi-Power connector and Nvidia's inconsistent performance with 50 series drivers. I’d prefer a 9070xt, though in terms of performance the difference between the two is minimal unless you’re after RT capabilities.

5080 isn't worth the extra expense. The average is around 10-12%, which is about 50% more.
