I'm setting up a new PC after more than ten years, and I'm thinking about using my old GTX 1050 3gb sapphire card with the Ryzen 5500 I already purchased. Will there be any performance issues if I'm only playing Genshin Impact and Honkai Star Rail? About the reputation of the 5500, will it slow things down?

1. It will function.
2. Please eliminate the term "bottleneck" from your perspective entirely.

What do you mean? Is it not a relevant term and if not why?

The term 'bottleneck' refers to those sections you possess.

Your 5500 is likely going to struggle because the older 1050 model is slow.

Bottlenecks are inevitable and differ from one title to another and application to application. If you already have the necessary components, simply use them.
Your graphics card is likely operating at full capacity in every game because it's the limiting factor when it comes to gaming. This doesn't necessarily mean anything else, but it helps you recognize the next step you should consider upgrading if needed.

Have you checked if the situation is okay in Genshin?

There's nothing
wrong
to begin with... bottleneck is just a term for the limiting factor. There will literally always be one no matter how expensive your hardware.
