My machine shuts down on its own during gameplay, often after the media player restarts several times before the shutdown. This typically occurs around an hour while playing games; for other tasks it's fine, though lighter activities like browsing cause issues. I also face issues with BIOS settings that aren't saved each time I power on the computer. Previously, I updated the BIOS to the latest version, installed a new M.2 SSD, and refreshed all drivers.

I also face an issue with BIOS configurations that fail to persist when restarting the machine. You may wish to replace the CMOS battery with a new cell and check if the settings in BIOS remain unchanged after a reboot.
Before this problem occurred, I updated the BIOS to the latest version, installed a new M.2 SSD, and refreshed all my drivers.
Did you reset the CMOS after confirming the BIOS flash was successful?

I often misremember that I just make progress at the end, not in every update. Should I go back to the old BIOS and restart that process?

No, that's not correct. Because you're using the most recent update, simply reset the CMOS and swap in a new cell. If the BIOS isn't saving settings, it likely means the CMOS battery is depleting or failing.
