Hi everyone,
Just checking if I can use prime95 to monitor CPU temperatures under heavy load on a non-overclocked board. Will it still function for testing temps? Thanks!

Nonsense. If it crashes it's either instability or overheating, but your CPU isn't overclocked so the built-in cooler should handle it (will be quite loud) and the PC should remain fairly stable at normal settings unless one part fails (such as faulty RAM).

they said it would crash immediately unless it was overclockable, which didn't make much sense.

My feelings are perfectly aligned! It's actually my friend's computer, which he built at that store, and I had some tension with him when he claimed the program would cause it to crash because it can't overclock. Maybe he didn't want to admit that the crashes were an issue, even though the computer was fine afterward. Just another example of someone in a store thinking they understand everything... confirming my views.
