I'm evaluating the need to replace my PSU since I suspect my Evga 850W G5 is failing. I was considering buying one on Amazon during Prime Day.

RMx + Cable indicates they are adding a new 12VHPWR connector that fits the 3090Ti or any of Nvidia's higher-end 40 series cards.
This wouldn't be beneficial for your 2080Ti, and it seems Corsair is aiming to phase out their less popular black-and-white 'custom' cables.

Ideally, it would help if your chassis is wide and not excessively long. If you have ample space for a larger-than-usual PSU, the benefit is minimal.
My Fractal R5 is quite long and not wide enough. It seems the shift might not be worth it. Thanks.

I might think about lowering the clock speeds on your 9900KS. It was a very powerful chip for its time and it seems like it could be operating at full capacity. It could also be that your motherboard is under strain. Turn off the power and adjust the clocks to match those of a standard 9900K to check if the issue resolves.
If you're planning to buy a new GPU soon, then investing in the RMx +Cable might be worthwhile. I don't think there were any 3080 or 3080 Ti models using a 12VHPWR cable—possibly it's the Nvidia card. It uses 3 8-pin connectors.
You can always buy a Type-4 12VHPWR cable from Corsair or a company like Cable Mod later on.
The RTX 4070 Super is better than a 3080 class card. If you're aiming for similar performance to the 2080 Ti, consider the 4070 Ti Super (16GB) or even the 4080 Super (16GB). The regular 4070, 4070 Ti, and original 4080 are no longer worth much.
That said, we should expect the launch of 50 series cards in the coming months.
Fractal Define R5 can work with almost any GPU available. But for cards like the 4080 Super and 4090, you'd want a power supply rated for PCIe 5.0 instead of 850x, or something else.
If I found myself in your position, I would consider sending the EVGA G5 850 for a warranty replacement; it comes with a 10-year warranty. If it's your sole power supply, then you have options:
(1) obtain the RMA approval and
(2) ask for an advanced RMA from EVGA. They may either charge you for the replacement and refund you once they receive the faulty PSU, or they might place a hold on your credit card until the damaged unit is returned, after which they’ll issue the refund.
If you’d rather buy a new PSU and Corsair is your choice, I’d recommend an ATX 3.0 or PCIe 5.0 model, like the Corsair RM850e. I recently ordered a Seasonic Focus V3 GX-850, so it might be worth checking out too.
I would definitely consider an RMA with EVGA, as they are very effective in communicating with their customers.
