Can I get a new key and install the newest version of 11 so all the updates are done, then log in with my old one instead? Is that okay to do?

If the current setup is all set up properly, you don't need a new key or even an old one for a complete restart of Windows. You really don't have to hunt down that specific license code. Does this old system belong to your Microsoft account? If yes, just clear everything and start fresh when it comes online later. It will work automatically once the computer turns on again, and you'll try logging in with the MS account.
