I found out that my PSU includes 2x6+2 connectors for the GPU, but my GPU only has a single 1x8 pin connector. Does using either of the 6+2 connectors matter, or are they interchangeable?

When working with two 6+2 PCIe cables or two 6+2 PCIe connectors on a single cable, any arrangement is acceptable for your GPU. Be careful not to mix a 6+2 PCIe with an 8 pin EPS. Also, if your GPU has multiple sockets, it's best to use separate cables for power rather than linking the connectors together.
Okay so this is a new build barring the PSU old build was retired about 5 years ago then brought back into use 3 months ago, still working but old so won’t update.
Now M/B is Asus rog strix B650E-E WiFi
CPU is amd Ryzen7. 8700F
GUP is Asus Dual GeForce Rtx 5060 8Gb
New SSD Crucial P510 1TB
PSU is original maybe around 10 years old but in good condition. Antec Truepower 750w
I will add 2 old 500 gb WD Black SATA drives one with around 350gb of music and one with around 350gb of films.
Also have a 250gb drive with windows 10 but updated from win 7 so will probably purchase a new install of win 11
