It's a tough decision. The savings between gold and titanium are small, yet titanium tends to be of better quality. Most EVGA G2 and many gold full modular PSUs from brands such as Corsair are already quite good.

The EVGA G2 performs well. The power consumption isn't an issue; the GTX 1080 has a 180W TDP, and many models use just one 8-pin cable, pushing the theoretical maximum to around 225W. A 550W supply is more than sufficient.
