I set it up on my computer but don’t know how to adjust folder and background colors. Can you help me achieve a look similar to this? Also, how can I switch the default file manager to Polo instead of the built-in one?

It seems this is a GTK application. which means it will take on the system wide settings. You can use LXappearence to modify GTK theme settings and apply different icon packs, fonts, etc.
