Syncthing on your server and configure it on your mom's machine to sync media folders for Plex. Then configure her PC to connect and share a matching folder. All you need to do is drag files onto the folder on her device, and Syncthing will update the server. An alternative is using a cloud sync service, though I prefer setting up Nextcloud securely online—it’s more complex than you’d expect.
