There’s software available that lets you run multiple Minecraft instances simultaneously while controlling each with a mouse and keyboard. You’ll need a virtualization tool like VirtualBox or VMware, along with a launcher such as NoxPlayer or a dedicated Minecraft launcher. Make sure your Windows 8 system supports sandboxing if you want to keep it isolated.

I believe Linus created a video about something similar.

No, it's about using VMs. @OP wants to know if he can run two separate Minecraft sessions with two keyboards and mice connected at once. I believe it's not possible.

He would simply repeat the same action that Linus did.

You can run two instances of MC without needing a VM, and since you can switch keys on different keyboards to avoid confusion, it’s possible. However, using dual mice isn’t straightforward—software might get mixed up if not set up carefully.

He would require a minimum of three GPUs to accomplish that.

It seems there isn't any software that lets several mice operate on a single PC. Minecraft on PC supports controllers, but using one as the active window might not be feasible. Running it in a virtual machine is likely the best path, though you'd still need an additional Minecraft license.
