You shouldn't compare them in that way. The same CPU must be used for the test, not different ones. Dual channel versus quad channel depends on the specific CPU. A Threadripper would benefit slightly, but the 10980xe isn’t designed for gaming. It can run games but you really need a 6-core 12-thread processor for anything beyond 8 cores—gaming won’t improve much in five years compared to a Ryzen 3600. Also, if you wait, Zen 3 will arrive and the 10900k will likely outperform it at a lower cost.
I own a solid motherboard for the 10900k, but I’m having trouble locating one. It’s completely sold out at all stores, so I won’t be purchasing it from eBay.
Thr 10900K isn’t widely available due to limited stock. It seems each retailer only has a few dozen units, likely because production costs are high and many units arrive with issues. The main issue with monolithic designs is that they tend to overheat more than solid-state alternatives like the board. As I mentioned, it’s better to wait for Zen 3 or opt for an i5 so you’re not stuck with a slow CPU in just two months when the 10900K falls behind a $200 processor.
