Have you thought about foot pedal controllers? They let you assign many commands or buttons to the foot device, while still using your hand, giving a solid gaming feel. I've seen them work for people who can't use their arms, and with some effort they're quite effective. It's a bit unconventional, but it could be the solution. Regarding cost and where to buy them...I'm not sure.

I just recalled a few titles you could complete with one hand. Here are some options: Back to the Future (tell/tell games), Civilization 6 Path of Exile, Pillars of Eternity, Captain Claw (old Schol), and Quake 1 (playable with just the mouse).
