You haven't encountered any issues with version 10, and it should work with DX12 as well.

Just learned about problems in the newest release regarding gaming. Windows 10 is using background processes that consume GPU and CPU resources.

Windows 10 is definitely the right choice, particularly since it's a fresh release. Any version older than Skylake, and especially with Ryzen processors, won't officially support W7, which could cause problems. You're also encountering DX12, which is gaining more importance. Running brand new hardware with an OS that's eight years old isn't advisable.

At the moment, there aren't many good reasons to choose Win7 with new releases. It's mainly useful if you need software that doesn't work on Windows 10. For gaming, an older operating system isn't necessary at all.

Windows 10 isn't a big deal at all. You can play games just as well as on Windows 7. The reason for choosing Windows 10 over Windows 7 is mostly about updates. It's not necessarily better in terms of performance—FPS might drop slightly, around 0.41 to 1 less. But it would have been a good upgrade if you were moving from older versions like Windows 98, NT, or ML.
