Are you including IP addresses on these VLAN interfaces or the switches themselves? How can I set up only the VLAN interfaces without a separate main LAN/WAN interface? Since you can’t use the web GUI, what should I do instead?

You're connecting from pvid 1 and can use that for setup. It seems many firewalls include a management interface—though the guide advises against assigning IPs to VLANs or bridges. I'm wondering why adding an IP just for management wouldn't cause issues. If you have another port available, I'd use it.

For my VLAN traffic on em2, there isn't a dedicated interface just for em2. This leads to many problems and traffic leakage. You might have an assigned LAN interface that you can use until everything is set up, then remove it later. Alternatively, you likely have another port available.
