I was attempting to evaluate the performance of a Win 10 Pro VM with your PC's resources. The GPU in the VM showed poor results—about 80% usage during stress tests, yet only 20-10 FPS in Fortnite. I considered running Furmark inside the VM but it consumed nearly all of your GTX 780’s capacity. I’m wondering if switching to Hyper-V would help, if there are fixes or drivers available, or whether VMware offers a way to enable full hardware passthrough directly to the GPU from within the VM.

Hyper-V doesn't allow GPU boost under Windows 10 Pro. Use Microsoft RemoteFX instead, which requires Windows 10 Enterprise, or Windows Server 2008 R2 or later. You might also attempt it with VirtualBox.

Yes, you can connect separate audio and USB devices directly to the VM just as you do in VMware software.
