I verified the SSD health using Sandisk. Ran RAM tests at 2400 MHz without DOCP and 3200 MHz with DOCP. Restarts still happen. The computer was assembled professionally, everything seemed correct. I’m uncertain about the RAM voltage settings.

Many individuals think they're experts... so perhaps Ram at 3600 should operate at 1.35V. Actually, I'd appreciate seeing the inner workings of your PC. Don't worry, even experts can overlook details.
