A 500 GB SSD is good, but I would rather a 240 GB SSD and 1 TB HDD than a 500 GB SSD only for his kind of work.
i have a 1tb from my old system that i will be using. I found a 256gb m.2 ssd from adata for $58. Also i read that a gtx 1070-1080 will be fine so maybe a 1070 ti . How would editing be with a 2600x and a 8600k( saw hardarecanucks edit using an 8600k instead of a 8700k)

They will be decent, depending on level of editing and resolution. However, the Ryzen 7's two more physical cores will certainly go long ways.
Yeah I put 500gb only because I was on a mobile device and didnt have the option (that I know of) to add another lol. 90% of the build I posted was premade from a 1300$ build I already had saved. It was more for a reference of what he should expect to get for the budget.
