I just assembled a setup using those parts, and I'm curious if it's possible to push the Ryzen 5 1600 up to overclock with the B450 AORUS M.

Yes, it's possible. Headroom is restricted on Ryzen processors overall, but using a "B" or "X" chipset board allows for overclocking.
