I’ll be using this setup for both work and gaming, which makes sense since I’m looking at the 1660Super now—it fits within my budget—but the 5600XT exceeds what I can afford.

The 3600 is a solid option. The 3300x also works well with higher average FPS, though it has lower lows, while the 3600 shines in multi-tasking and handling other workloads. I think it’s wise to upgrade the platform first and hold off on your GPU until the market improves. GTX 1080 is already a bit outdated and will drop further. Also consider the cost of the motherboard and RAM. A 1050 Ti could limit performance with the 3600. Still, you can get the most out of what you have and fit within your budget.

Improving FPS on a stronger GPU while keeping the same CPU is still a sign of a GPU limitation. Even without that issue, other parts of your system would prevent you from reaching endless frames.

The 1050Ti isn't limiting the R5 3600's performance. It could actually restrict the desired output, but the 3600 is more than enough to support the 1050Ti and achieve optimal results.
