I've got a second mixed reality headset. Your PC runs a Ryzen 5 1600, GTX 1070, and 16GB RAM at 3000MHz. It's doable to use both headsets at once. Windows supports multiple VR devices natively, so you don't need a VM. For free or budget-friendly multiplayer VR games, check out titles like "Half-Life: Alyx," "Job Simulator," or "Beat Saber."

If you already possess two, simply give it a try and see what happens.

You'd require a virtual machine with GPU passthrough and two GPUs (one per VM). In the end, each headset needs a machine—either a virtual or a dedicated physical one.
