If the guild materializes, which faction should we expect? I don’t mind either option—my past choices were Horde, but my priest was with the Alliance on Nost, so it’s not a big deal.

I usually stick to the horde since that's what I'm more used to. Personally, I'd try 60 in an alliance but it doesn't really matter which way you prefer. Tl;dr: It doesn't matter

I've never played horde before, except around level 20 or so. I think I'll try it myself.

Sure, just to clarify—yes, it’s fine. If you’re only using it for casual conversation, there’s an option available. I’m not certain about any special access needed, but I’d recommend checking the guidelines.
