Chose to boost my I7 860 to 3.5ghz, achieved stable performance. Set voltage at 1.25000, using a Gigabyte P55A-UD3 motherboard. Temperature remains around 55°C during normal operation. One core reached 83°C under full load stress test for about 8 minutes—seems acceptable. Voltage level appears suitable, but consider increasing if needed. Feedback or suggestions appreciated.

That's acceptable. Most Intel chips will reach their maximum boost across all cores. At 1.25 that makes sense.
Your temperatures should fall within this range:
Idle 30-35°C, gaming 55-70°C, stress load 70-85°C. The usual recommendation for OC is to maintain it as close to or below 80°C as possible. You could consider a better cooler or reduce it slightly to 3.4GHz and check if temperatures drop below that threshold.
