It relies on the manufacturing date. Unless it's an APU model, it's probably updated; if it is, it's uncertain.

Aorus motherboards usually display the BIOS version on the packaging. If you purchase in-store, verify the revision to ensure compatibility.

In general, yes. It's easy to check if the motherboard is compatible with Zen 3 without needing to update the BIOS. These boards come pre-configured for the AMD Ryzen 5000 desktop setup. I believe the X570S model supports Ryzen 5000 series processors right away.
