I compete in Rainbow Six Siege with a blend of ultra and very high configurations. I also enjoy Overatch at maximum settings and aim to broadcast at 1080p60 or 720p60 with a 1Gbps downlink and 800 Mbps uplink. My monitor specs are 3440x1440 at 75Hz. My system includes an Intel Core i5 8600K @ 4.8GHz, a Strix 1080 Ti @ 2GHZ, 16GB Crucial Sport Ballistix Mobo, Gigabyte HD3P Z370, and a Samsung 960 Evo 1TB with 216GB free. I use OBS for streaming. This is my first time streaming, so I'm unsure if it will work given the high resolution and frame rate.

CPU could limit performance at 1080p resolution, but using QuickSync might help. This applies especially if you lack dual or additional monitors.

It should work. You're likely missing an encoding rig or capture card. Using NVENC would give you better video quality with less impact on performance. If you stuck with x264, you'd probably need additional tools to speed up the encoding process.
